1 package Nona Lim Pad See Ew Stir-Fry Starter Kit

Soy sauce, 1 tbsp

Vegetable oil, 3 tbsp, divided

Flank steak, ½ lb, thinly sliced into 2″ pieces

Garlic, 3 cloves, sliced

Chinese broccoli or broccolini, 2 cups, cut into 2″ pieces with stems thinly sliced on the diagonal

Eggs, 2, beaten

Combine the soy sauce and 1 tablespoon of vegetable oil in a bowl, add the flank steak and mix to completely coat. Set aside.

Cut a 1″ slit in both noodle pouches and microwave for 1-2 minutes until the noodles are warm. Leave the noodles in the pouches so the steam will separate them.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the flank steak and stir-fry 2-3 minutes until partially cooked, then remove from the pan and set aside. Stir-fry the garlic for 10 seconds, add the broccoli and stir-fry until slightly wilted, 30-40 seconds. Remove from the pan and set aside.

Lower the heat to medium, add the noodles to the pan followed by the pad see ew sauce. Gently toss to coat the noodles and move them to one side of the pan.

Pour the last tablespoon of vegetable oil onto the empty side of the pan, add the beaten eggs, let them set halfway and then scramble lightly. Return the meat and veggies to the pan, gently stir-fry everything for 1 minute and serve.
Tip: For the best flavor, it’s important that the sauce completely coats the noodles, which is why I recommend removing the other stir-fried ingredients from the wok before adding the noodles and sauce in.
